Grilled Pound Cake with Mixed Berries and Fresh Whipped Cream

This is a super simple summer recipe that you can make even easier by using store-bought pound cake. YES! Once you grill it and add the mixed berries and fresh lemon-infused whipped cream, all you'll be thinking about is how much you LOVE this combination of flavors. So refreshing, so easy and so perfect for your summer menu.

SERVINGS: 8-12 (depending on cake shape and size)

ACTIVE TIME: 15 minutes

CHILL TIME: 30 minutes

INGREDIENTS:

Whipped cream

  • 1 cup chilled heavy whipping cream

  • 1 tablespoon agave nectar (OR 2 tablespoons powdered sugar)

  • 1 teaspoon lemon zest

  • 3 teaspoons lemon juice

  • 1/4 teaspoon vanilla extract

Mixed Berries

  • 1 cup fresh chopped strawberries

  • 1 cup fresh blueberries

  • 1 cup fresh blackberries

  • 2 tablespoons granulated sugar

Pound Cake:

  • Your favorite pound cake (store-bought or homemade). Preferred brand: Wegmans

  • Softened butter

DIRECTIONS:

Whipped Cream:

1. Combine all ingredients in a medium bowl.

2. Beat in a circular motion with a hand mixer for about 45 seconds or until waves start to form.

3. Refrigerate for at least 15 minutes before serving.

Mixed Berries:

1. Rinse berries well; hull and chop strawberries.

2. Transfer all berries to a medium bowl.

3. Sprinkle sugar over berries and mix well.

4. Refrigerate for at least 15 minutes to allow syrup to form.

Pound Cake:

1. Slice pound cake into thick slices (about 3/4" each).

2. Spread softened butter on both sides of each slice.

3. Heat grill or grill pan to medium-high.

4. Grill on each side of pound cake slices for 2-3 minutes or until grill lines start to form.

5. To serve the finished dessert, pour berries and syrup over each slice of pound cake and top with a dollop of whipped cream.
